I saw a recipe in DANDR for some type of fried meat that used crushed pork rinds instead of flour as the batter. I still can't imagine eating pork rinds (that grosses me out), but anyway if you all have the book, you'll see the recipe I'm talking about. I think it was chicken with egg brushed on it, and then pork rinds and parmesan? Perhaps the recipe page has it as well.
