How do you want them? If you wan them thick but fluffy, include a teaspoon of baking soda and a splash of vinegar in the mix. Flat, leave it out. It is difficult to make good LC pancakes as soya flour doesn't stick together like normal flour and you need more egg or they fall apart. You might try adding some wheat gluten (but this would up the carb count a little). I haven't tried it as I'm happy with the little fluffy ones which I can now make well each time - but it's worth a try.

90% soya protein powder from Holland and Barretts is also good for making pancakes - and it's 0 carbs.
