Unfortunately it's sometimes hard to find a "pure" sliced roast beef in the deli. It does exist, but most deli meats have sodium and other things added to either enhance flavor and/or to preserve them so they "keep" longer (I'm betting the preservatives and possibly added sugar is where the carbs come it).
In looking at the "Beef, luncheon meat, sliced, prepackaged or deli" entry in Fitday, it gives something like 1.6g carbs for 1 slice. That even seems high, but the sodium count is right on. Best thing to do is request the info from the deli. That way you can't be wrong. Between all of us here, you'd think we've seen it all!
