I freeze grated cheese all the time, I use small ziplock bags and put 2 cups in. Many recipes call for 2 cups of cheese, so it makes it easy and defrosts fast. And if you shop at Costco they sell grated cheese in large bags that you can divide out in smaller quantities and freeze.
