If you do freeze cheese, it doesn't change the taste, but it can change the texture a bit. I often buy cheese on sale and pop it in the freezer to keep space open in the refrigerator. The only small problem that I've run into is that when I try to grate previously frozen cheese, it's often more crumbly and difficult to grate. OTOH...maybe if I grated it first I wouldn't have such a problem.
Something you can do with cream is freeze it in ice cube trays (this works great for broths too) and then put it in a zip-top freezer bag. That way, you don't have to thaw out the whole thing when you need some...just the amount that you want.
