I freeze cheese all the time! When you go to thaw just throw it in the fridge for a few days and wa-la good as new.

I have tried to freeze heavy cream because I have frozen milk before. It was a mess. I froze it in the carton (not a great idea) When it thawed the carton fell apart. This was before I started this WOL and I just figure now if I find it on sale I still only buy what I can use!
