Help w/stir fry & shiritaki noodles
 
I am hoping I can get some suggestion from folks re: making a stir fry with Shiritaki noodles. I am so thrilled to have found them in the Oriental store and can't wait to try them. The gentleman who owns the store said they are rather flavorless and will take on the flavor of whatever they are cooked with.

I was thinking about a basic stir fry, such as olive oil, garlic, chicken, veggies, and the noodles. But I wanted to see if anyone had any other ideas/recipes they've made with the noodles.

Has anyone ever used these noodles before? Any tips re: cooking them. I've heard you just rinse them and put them in the stir fry towards the end as they only need to be reheated. True?

True. They are already cooked. But, you should give them a quick dip in boiling water to refresh them.

I think they work best in soups, or where there would be a lot of sauce. They're most commonly used in sukiyaki.

I've eaten shirataki in sukiyaki before, but isn't it made with potato starch or something? Is it legal on Atkins?
