making my own sausages
Hi all, I would so much love to make my own dri3d sausages! I have a recipe, from a butcher I bought 20 sausagew from when I was in the Netherlands the other day, but I do not know how to dry them.
Is there anyone around here who could tell me that? All sausages I can buy here (in Ireland) have rusks in them - a kind of breadcrumbs, so they're not suitable for me. Thanks a lot in advance, Vilica |
That's a fairly unusual question. If it were me, I'd be doing a web search or library search (sometimes these days that's the same thing!) on +sausage +recipe +drying +making or some key words along those lines.
Hey, I actually did (with my new favourite Search Engine at www.google.ca) a search using Sausage, Recipe and Dry as the keywords, and it promptly came up with a lot of useful webpages, this one at the top... (BONUS, it includes jerky recipes, and weren't you looking for sugarfree jerky, too?): http://www.telusplanet.net/public/a...erkysausage.htm ... and THIS one looks really handy, it's titled "dried sausages" and it's out of Australia: http://www.biltongmakers.com/biltong20_drywors.html ... this one has some good old-fashioned nedelandse or afrikaaner words like boerewors, plesing to my Apeldoorn-born soul. Enjoy. |
Yum! I love droë wors. There's a South African butcher in Langley that sells biltong, boerewors, etc. It's the best plane food I know of.
Good luck with your sausage drying Vilica. Let us know how they turn out. Karen |
BEDANKT, JUDI AND THANKS, KAREN!
Sorry I didn't react sooner, but I've been away for the weekend and didn't see your messages till now! Interesting, all that info on the web, I will certainly go and check those links out as soon as I have time!
At least there is hope I will find the method one of these days, that's great!! thanks a LOT! Vilica |
