Eggs Florentine
Serves 4
4 eggs 250mL/8 fluid oz cream 120g/4 oz grated cheese 300g/10 oz frozen spinach Thaw spinach, and squeeze out excess liquid. Place in 4 greased ramekins. Place an egg in each ramekin. Bake the eggs and spinach in a moderate oven for about 10 mins. While they are baking, simmer the cream until it is thick and "gloppy." Take off the heat and stir in the grated cheese. Pour the cheese sauce over the eggs. Top with a little extra cheese. Bake for another 10 mins or until the top is browned. |
