How to read results on Hidden carb calc

For example ,I ran pork rinds which according to the bag they have less than 1 g of carbs and the results said they had like 3.53 carbs but the difference by weight was exactly the same, I ran something before and it gave me a figure and the diff. by weight was a negative number...do we subtract that from the actual carb #? For the heck of it ran some sugar free jelly beans and it said 31.9 carbs and diff by weight was 27.9 which one is the right one...(of course they were made with Malitol and clamed only 4 effective carbs)but I was curious.....anyway any help would be appreciated...oops one more question...the fiber box I have been adding the # in there if it's on the label and I only check the box it says the manufacturer already subtracted it am I doing that right?
