Heavy Cream?

I have read alot of recipes that require heavy cream. I bought a container and was surprized to find that it has 1 carb per Tablespoon. That seems like alot. There is a great recipe for seafood bisque that calls for 4 cups of heavy cream....16 Tbs per cup.......that 64 carbs. Now am i reading that wrong or maybe my heavy cream has hidden sugar? Can anybody help me out with this.

Some whipping cream does contain dextrose but it will say that on the label. 1 gram per tablespoon is a bit high for a cream with high fat content. Does it contain anything else?

Whipping cream usually weighs in at 6.6 grams per cup. You don't need to use 4 cups of cream in a bisque. Usually one will give you a smooth rich texture, depending on the volume of other ingredients.

Dairy products - all of them - contain carbohydrates. Even butter - unless its clarified - has a trace.

An alternative is to search out a brand that has no junk in it. Most well-stocked natural foods stores sell dairy products that are junk free.

Hey Karen

Thanks for the advise. I just read the label on my heavy cream. Cream, Milk,Carrageenan, Mono and Diglycerides, ploysorbate 80. Is this normal heavy cream 1TLB 1Carb. I will go to the organic market to try to find better.

I wanted to use it to make shakes...for texture.

Thanks
Mike

Milk

That's the culprit. The rest are texturizes and preservatives. Makes you wonder why there is milk in cream, doesn't it?

Just had a thought. Is it whipping cream you have or half and half? Other creams are higher in carbs.

I use a bit of full fat yogurt and half of a Haas avocado when I have a protein shake. It makes it very thick. If you use frozen berries or ice cubes, it's even better.

I am trying to fing plain yogurt that dosen't have sugar in it. I have looked in several places. I will keep trying.

I have half & half but it also has 1 carb for 2 tablespoons. Maybe there is milk in that one too.

Thanks
Mike
