Turkey with Lime Sauce!!
I was a little leary about this at first but made it last night and it was wonderful!!!!!! I did put a little bit more lime juice in it then it called for. I used all of the juice that I could get from one lime.
2 TBS fresh lime juice 1 TBS chopped green onions 2 TBS olive oil, divided 1/4 tsp Dijon-style mustard 1/2 tsp grated lime peel 1/4 tsp honey 1/4 tsp salt 1/4 tsp freshly ground black pepper 4 turkey cutlets In a small jar with a tight-fitting lid, combine lime juice, green onions, 1 TBS of oil, mustard, lime peel, honey, salt and pepper. Cover and shake mixture well. In a large nonstick skillet, heat the remaining oil over medium-high heat until hot but now smoking. Add turkey cutlets and cook, turning once, until cooked through and no longer pink, about 4 min. Transfer turkey cutlets to a serving platter. Spoon lime sauce on top. Garnish with lime wedges.
