Pineapple Pina Colada
 

Oh My GOD! I just had the best tasting thing in years! I'm out of cream cheese (and out of $$ to buy more :rolleyes: ), so I was looking for a high-fat treat to boost my fat percentage which was low today. Here's what I came up with:

1/3 coconut milk
1/3 heavy cream
1/3 Sugar-free Pineapple drink mix
Splenda to taste

If you can't find the drink mix (Crystal Light), try pineapple extract, or pineapple SF Jello and some water. I just shook mine, but if you did crushed ice and a blender this would be a great Virgin LC Pina Colada! This was so good I've just about got the shakes from wanting another one!

coconut milk?
 

Can you buy coconut milk in the store? Or did you use a whole coconut? I would love to make this but didn't know what to use. I also can't find pineapple crystal lite :confused:
