Glenna's "Comfort Meal" Meatloaf
 
Even my husband loved this, and he's a tough sell. This is real, honest to goodness comfort food. Depending upon how many carbs you're allowed, you can spoon some of the tomato sauce over the meat. If not, let the others enjoy that part - you will love this even without the tomato sauce. The sauce works well regardless to keep this loaf nice and moist.

INGREDIENTS:

1 lb. ground beef
1 lb. ground pork
1/2 small onion, finely minced
1 egg
3/4 c. finely crushed pork rinds
1 tsp. Worcestershire sauce
1 level T. minced garlic (you can use less, but I found this amount divine)
2 T. no sugar added ketchup
dash Italian seasonings
dash pepper

1 can no sugar added tomato sauce

5 T. no sugar added ketchup

DIRECTIONS:

1. Preheat oven to 350F.

2. Mix together first 10 ingredients. I use my hands to get the meat really well mixed and soft.

3. Form the mixture into a loaf. Place in a pan.

4. Add the can of tomato sauce all around, but not on top of, the loaf.

5. Cover with aluminum foil and bake for 30 minutes.

6. Uncover and discard aluminum foil. Place the 5 T. ketchup on top of the loaf and coat well, using the back of a spoon.

7. Bake uncovered an additional 15 minutes.

8. Allow the loaf to sit for 15 minutes after it's finished baking, before cutting and serving.

DELICIOUS. So so good. You do NOT need to add salt into this recipe. The pork rinds are salty and add just the right amount of flavoring.
