Chipotle/Cream Cheese Eggs
 

I'm not big into eggs for breakfast but I love them for dinner. I came up with this a couple of weeks ago and am addicted! The eggs come out soooo soft, it's ridiculous.

Cream Cheese (1/3 block)
5 eggs
1 chipotle pepper (and maybe more sauce if you like, I like)
onion to your limit or taste

Carmelize the onion to get it nice and sweet
Add the chipotle and cream cheese, let cheese melt down
add eggs
swirl around in pan (I don't beat the eggs)
cook till eggs are just done

Bliss.

The chipotle/ cream cheese is good on chicken and fish too, loorddy. YUM! :)
