Coating Beef & Pork Stew w/Oat Fiber 500 ???
well, i'm about to run to the store to get some more items for my Sunday stew pot.
i was thinking of doing something a little different because i never coat my meat or pork with lc flour and i was thinking of using the oat fiber 500 i recently purchased to coat/brown the meat before adding to the stew. has anybody used the oat fiber before to coat red or pork meat? will it bind and act like a regular flour coating? i don't want to mess up my stew if its not going to behave the way i expect it to. anybody got any advise on this one or should i just brown my meat flourless like i normally do? |
Try it on just one small piece and see if it sears OK for you. Taste it. If you're satisfied, I'd go for it. I have oat fiber, but haven't tried it this way. And now that I'm trying to switch to Paleo/Primal, I likely never will. I have in the past used Carbalose flour as well as sifted out the shortening in Carbquick and dusted meat with those before successfully. Makes for a browner gravy.

okay. so this actually worked. the oat fiber 500 behaved just like regular flour. here is a pic of the test sampling i tried after browning and using the oat fiber to make a roux. :thup:

And it looks like your resulting roux thickened your final dish nicely. Thanks for the feedback. I was wondering if it would work that way, but hadn't gotten around to trying it yet.
Now I just have to decide if I'm going to use it since I'm eliminating all all wheat and wheat by-products as I begin testing the waters of Paleo eating this month. |
