Sippable Porridge
I used to take oatmeal, add a bunch of milk to it, to where it was a sippable consistency and then drink it in my car on the way to work. I came up with this delicious low carb version. I've made it with coconut milk, almond milk, and a combination of the two. Either way it works. If you use coconut milk make sure it's the carton not the can version. It takes about 5 min on the stove to get the consistency I like. I haven't tried it in the microwave. It might work if you heat it in increments an stir well. I find it just as fast to spend five minutes at the stove while sipping my coffee.
This is very filling and lasts me all day. You can do 1/2 scoop of the protein powder if you want less protein. 2C unsweetened plain coconut milk or almond milk 1 egg .3 oz flaxseeds 1 oz zero carb vanilla protein powder (1 scoop) cinnamon salt splash of maple extract xanthum gum (optional) sweetener to taste (I use 2 drops of liquid sucralose) In a small stock pot whisk all the ingredients together over medium heat. I find that right before it boils is the perfect consistency for me. Turn the heat to low if you let it cook longer. If it's too thin sprinkle a tiny bit of xanthum (or guar) gum over it. A tiny bit! If it gets too thick just add a few tablespoons of water to thin it out. Then just pour it into a big mug or thermos and you're ready to go! Calories: 345 Fat: 19.3 Protein: 37.8 Carb: 5.9* Fiber: 2.3 NC: 3.6 *This is adding .5 carbs for the egg and .5 for my "zero" carb protein powder just to be safe. |
