Carb Counts for Potatoes ?
 
I was looking at the carb count for potatoes and wondering why a potato with skin has a lot more carbs than without ? I would think that the skin has more fiber and would be better for you. :q:

Fiber is included in the Carbohydrate macronutrient - I'm guessing because it is not a fat or a protein. Nevertheless, you can subtract the grams of fiber from your carb count because it's indigestible and doesn't affect your insulin levels. We call this "net carbs": total grams of carbs minus fiber grams.

Potatoes with or without their jackets will inhibit (if not prevent) ketosis and fat burning, though, so it's best to avoid them on Atkins!

I'm one of those people who find fiber overrated, anyway. It gets deducted from the carb count because it's indigestible.
