Nopalitos!
 
*1 cup fresh diced nopales (cactus)
*1 tooth of garlic
*1/4 cup (or less or more) - onion
*Salt
*1 egg (optional)
*olive oil

You can find cut up nopales in a lot of Walmarts here in the South and up North in any Mexican food store. It's an important staple for many Mexicans. Here's a pic so you'll know what to look for.

Anyhoo. Rinse your nopales and throw in a heated skillet with your onions, garlic, salt and a few tablespoons of olive oil. You don't need to add any water because it'll cook out of the cactus. Cook on a med/high heat until they turn a darker color and start to carmelize and turn a bit brown around the edges. The cooking time depends on how much water is in your cactus but I'd say 20 minutes or so - maybe longer. By the time they're done most of the liquid will be cooked out of the pan. When they're done to your liking go ahead and add in an egg - or two - to the pan and stir around to scramble. Here's a pic of some I made last night for my husband (in a tortilla, plus a little fresh jalepeno in there :) )

The flavor is reeaaally hard to explain, but a lot of people say it's kinda like green beans. It's a bit sour if you ask me and lol it tastes just about like you'd IMAGINE cactus would taste! :D If you've never had it try it out, it's not expensive and you just never know - you might love it. We eat them for breakfast, lunch and dinner :) PLUS - the carb count is really LOW!!! :)

I always wanted to try it! I live in Canada but maybe I can go to a Latino market to see if they have them.
