Microwave Scotch eggs 2 minutes
 

Very quick and easy and good :yum:

Nuke 3 minutes on medium or low.

Method: slice sausage patty length-ways into two thinner patties. Place a slice in each container or into an Nordic Ware egg poacher. Add one egg / dish or side. Prick yolks with a toothpick or fork so they don't asp-lode. Top with fresh ground pepper or cheese if desired. I sometimes use Swiss or Parmesan. Microwave for ~1.5 min / egg approx.
