Low Carb Fudge?
 
I know I have seen a couple of low carb Fudge recipes with pacans, but for the life of me, I can't find them now. Help! :help:

Hope some of you guys can help me? :q:

Hi Jo Ann,
I found this on a a different site a couple of weeks ago. I made it and found it to be more like brownies than fudge. I also didn't use all the nuts it called for or put the whipped cream on top...tooo sweet. It was on a thinnner web page I think
FUDGE PIE:

Ingredients:

3/4 cup butter
3 (1 ounce) unsweetened chocolate squares
3 large eggs
1 1/2 cups splenda measure
3/4 cups fine ground almonds
1 tsp. vanilla extract
1/2 cup chopped pecans

MELT butter and chocolate in a small sauce pan over low heat, stirring often until melted.

BEAT eggs at medium speed with an electric mixer for 5 minutes (its important to beat for at least this long). Gradually add splenda, beating until blended. Gradually add chocolate mixture, ground almonds, and vanilla, beating until blended. Stir in pecans.

POUR mixture into lightly greased 9-inch pieplate.

BAKE at 350 degrees for 35-40 minutes or until center is firm. Cool. Slice into 8 "pie" pieces. Top each slice with fresh whipped cream.

Enjoy.

Pecan fudge
 
JoAnn,
I take 8oz of cream cheese and soften to that I add two tbsp. of peanut butter, 1 tbsp. of chocolate cocoa and 1/4 cup of splenda.
Add more if you like sweeter. Mix until smooth and add 1/2 cup finely chopped pecans. Pour into a butter dish and let set up in the refrigerator. I have tried this with different nuts and each time it comes out great. About 2 carb per piece(24 serving.)
