Grecian Chicken?
 
In my high carb days I used to love a pampered chef dish called Grecian Party Squares. After reading the smothered chicken thread I decided to try a similar thing.

8 boneless breasts
Beaten egg for dipping - optional
Olive oil - optional
Grated parmesan - optional
1 pkg. vegetable soup mix
1/2 cup sour cream
1/2 cup mayo.
1 cup feta cheese crumbled
1 pkg. frozen chopped spinach. defrosted and drained
1 - 8 oz. can artichoke hearts in water
1 - 8 oz. can water chestnuts
1 clove of garlic (crushed)
1/4 cup fresh parmesan cheese.

Pre-heat oven to 375 degrees.

Prepare chicken breasts either by dipping them in an eggwash and frying them lightly in olive oil or dredging them in parmesan and frying in the oil or totally uncoated and raw or grilled or coated in egg/parmesan and raw. Place in a 10x13 pan (it takes a bit of squishing).

Combine mayo, soup mix, and sour cream in bowl and set aside.

Combine drained artichoke hearts,spinach and water chestnuts in food processor and chop - not too smooth. and add this to the soup mix in the bowl. Add the feta cheese and the garlic, and mix well.

Spread mixture evenly over chicken. Top with shredded parmesan and bake for 15 minutes. 30 If meat is totally raw.
