LUNCH: salad w/ mayo and chooped egg, sf jello, water SUPPER: one-pan chicken/veggie/stuffing/mush soup skillet, salad w/italian dressing, water, piece blueberry pie, decaf w/ cream SNACKS: celery and gr pepper sticks w/ ceasar dip, apple tea w/ sweetener That's it for today. |
Breakfast: salmon courgette and cream cheese omlette, i coffee with cream
Lunch: cold chicken, on lettuce with mayo Dinner: two cheese burgers with sour cream and sliced tomato one coffee with cream Mmm - didn't get in enuf vegies did I :thdown: Lesley |
Br: my old favorite - crustless mini quiche. They're quick and easy, and I amke and freeze 12 at a time
L: zucchini latkes with melted mozzarela on top, 6 meatballs D: fried pork chop with drippings sauce, fried mushrooms, tossed salad with oil and vinegar Sn: macadamia nuts Doesn't sound like much but the calories were a whopping 2300 from the nuts, the butter in the mushrooms and the salad. It was a victory in the gravy battle. For months I have been fiddling with making LC gravy, and most have been good enough only for the trash can. Today I tried a tip..think it was from Alto remeniscing over 25 year old pre low fat craze cookbooks and the sauces that are popular in french cooking. in the pan drippings from the pork chop, added a couple of tablespoons heavy cream, stirred and simmered on low until it was thickened. Finally!!!!! an acceptable gavy, although I expect the proper culinary word is sauce. *doing the happy dance* |

Yes it's a bit of a favourite for me. I mix eggs, (about 1.5 per serving - so about 6 for 4 servings) with 2 large grated courgettes, two tins of salmon, one sliced onion, pre-cooked in a bit of butter, about half a queezed lemon and about 100gr of cubed cream cheese. Mix it all together, throw it in a pan on the stove top until it is nearly "set". I then sprinkle grated cheese over the top and finish it off under the grill! :yum: It's so packed with goodies that it's more lile a pie than an omlette. The whole family loves it so we have it about once a week. Lesley |

2 eggs (one egg white,one with yolk) husband got other yolk te he!!! decaf coffee-splenda ( still hate splenda but oh well ) Snack: sugar-free peanut butter on celery Lunch: Romaine salad ~ shredded cheese,mushrooms,parmesan, chicken breast ( left over from supper) and creamy caesar Renee's lite low on carb Supper: Crock Pot Sloppy Joes (from low carb cafe.com) GOOD Cauliflower/Broccoli baked with cheddar cheese Walked ( as usual :o ) 4 k. Came home for Snack: Diet Jello and Whipped cream slightly sweetened with Splenda Smiley :wave: :oh ya,almost forgot , Lake Ontario worth of water :daze: |
