Egg Nog
I made some egg nog tonight. I am bad with measuring so I am guessing.
1 raw egg or equiv. egg beaters ( I do raw ) 1/4 cup heavy cream 1/2 cup water 1 t vanilla 4 splenda packets 1/4 teasoon nutmeg 1/4 teaspoon cinnamon 1/2 t xanthum gum Ice Combine in a blender until frothy top the foam with additional nutmeg if desired |
What if you don't have the x gum, any other substitues?

What is xanthum gum? Is that a thickener?

It just adds to thickness. You can leave it out or add a bit more cream to it.

It is a thickener. I get it at a HFS but netrition sells it too I think...

brandy has no carbs right. i am going to give this a try but i am a little skeptical about the raw egg so i am going to add brandy bc in my mind this will cook it. lol

Dana Carpender also has a good eggnog recipe (I believe it is in 500 Low Carb Recipes). My hubby & I loved it.
HOWEVER...When we added the brandy - it was a disaster. something about adding the alcohol gave it a REALLY nasty taste. Just a word of warning.... |
