Cheese muffins - SCD and Atkins friendly
 
*Not suitable for Atkins Induction*

Makes 6 muffins

100g/1 cup almond meal
25g/1oz butter
2 eggs
90g/3oz grated cheddar

Preheat oven to 180-200ºC/360-390ºF
Melt butter, then add other ingredients and mix. Place in well buttered muffin tray. Note, the mixture is quite thick.
ETA: Beating the eggs to at least double their volume before folding into the other ingredients lightens the muffins considerably.

Bake for around 15-20" or until well browned and an inserted skewer comes out clean.

You could also add chopped ham or chopped, cooked bacon if desired.

I am fixing to make these for my breakfast. I think my family will really enjoy these. I am going to add chopped bacon in mine, Thanks for recipe - I am always tring to find new and tasty recipes for me and my family. I will let you know how I like it!

Roz, I was inspired this morning to alter these - left out the cheese and added cocoa & splenda & a bit of extra butter to moisten the extra dry ingredients. SCD forbids splenda, can you have honey in them? Mmmm, they were so good, chocolate for breakfast, I love this WOE!!! I added a scoop & a half of cocoa (about 1/3 cup?) and enough splenda to make it sweet enough for my tooth (which since this woe is not that sweet!!!)

SCD permits honey - yes, but not cocoa. :cry: But it's (honey) not terribly compatible with Atkins, so I am restricting my use to occasional only.

Kate, you might need a little more protein at breakfast than just choccie muffins. Maybe have them as breakfast "pudding?" :D A decent amount of protein at brekkie time has been shown to keep blood sugars (and therefore insulin levels) on an even keel for most of the day. Just a little suggestion.

Thanks for the tip... I usually have protein for brekky but this morning just couldn't stomach it... the idea of more meat or eggs was just making me gag. I'll probably get DH to pick up some chicken wings though and I can have breakfast a' la' Roz :)
