Substitute for Cornstarch
I am wanting to make some low carb sesame chicken. Does anyone have any suggestions for what I can use as a substitute for the Cornstarch?

Guar gum. You buy it in a health food store or bulk food store. It's a whitish powder.
A LITTLE GOES A LONG WAY so start small. Perhaps 1/4 tsp for a cup of liquid then add more if needed. It will dissolve in either hot or cold liquids and gives the same shiny translucent look as corn starch. |
The 1/4 tsp will give you a good light sauce, a little more will give you a thicker gravy like sauce. Do start with 1/4 tsp as you can add. It has no flavor.

Do you want the the kind where the sesame seeds to stick to the chicken?
Mix 1/2 cup of mayonnaise with 1 egg yolk and sesame oil to taste. I also like to add 2 Tbsp. of Dijon mustard. It doesn't really give a mustard-y taste but it adds a lot of zing. Roll the chicken in the mixture, letting the excess drip off, then in the sesame seeds. Karen |
