I found this explanation of why some can and some can't eat low carb products to be very enlightening and just wanted to share it:

"How do you make wheat low carb?
Some of my patients find that the hardest thing to give up in their diet is bread, so they start using low carb breads, bagels, or pastas as a substitute. Beware of relying too heavily on these products.

Grains contain gluten, which is a collection of proteins that can disrupt the immune and digestive systems of some persons. Cutting the carbs out of wheat products concentrates the gluten and allergenic proteins. If you have sensitivity to these, you may experience digestive bloating and upset, headaches, fatigue, allergy symptoms and/or inhibition of weight loss.

If you have been experiencing these or other recent unexplained symptoms, cut out all low carb products and stick with the natural protein foods for at least two weeks, and see if your symptoms resolve. "
