Pie crust?

HI all.. my mom is making one of my favorite things right now and I can't eat it when it is done. :(* BUT I was hoping I could make it a low carb way... She is making Turkey pot pies. So I need some ideas on how to make the crust. Not sure if I can just use soy flour instead of white flour or ?? Has anyone made pumpkin pies or apple pies??? What did you use for the crust?? Thanks all!!

I use the carbsense zero carb bake mix(not the pie crust mix,too sweet for me) butter & no trans fat shortening. Whirl in the food processor till crumbly, then drizzle cold water to form a ball. Roll out & place in pie pan. I do blind bake it for 5 to 8 minutes at 400 degrees before I add the filling. I think the proportions are 1C bake mix, 2 T butter, 2 T shortening or lard & aprox 3 T cold water. Zero carbs!
I also use the sugar free vanilla wafers for crumb crusts. Smash up enough vanilla wafer to make 1 cup crumbs, add 4T melted butter & press into a pie pan. Bake at 350 for 8 minutes are until set. Cool & fill. 5carbs per 1/8th slice, 2carbs sugar alcohol.
