Have a scroll through Salads Veggies & Side Dishes. Not a lot of opening cans as I recall, but a lot of pretty easy dishes.

Sometimes you can just open a can, well maybe not for induction, but you're really close to goal :)

Black soy beans come in a can and can be added to mexican rice, chilli, or a number of other things. Also they have a refied bean variety.

Spaghetti squash can be a pain to cook, but then you just keep it in the fridge. Grab a 1/2 cup and top with garlic butter, heating in microwave. You get a great pasta like side dish.

Some dishes sound more complicated then they really are. The tofu mac and cheese takes a while to cook, but it's very easy. You just mash some tofu up, add a couple eggs, some cream, and 2 cups cheese then cook. You get a homade mac and cheese like dish.

Take and throw a head of cababge in the food processor (cut it into 1/4 first) then just keep it in a zip lock bag in the fridge. Then you take out some and mix with mayo, sweetner, and some vinigar for homade coleslaw. Fry some bacon, then fry the cabbage in the grease and crumble the bacon into it for a great fried cabbage breakfast or side dish.

If you'd really rather just open a can, Del Monte's Italian style zucchini is delicious - but be prepared to shell out $2.59 for a small can.

Canned mushrooms aren't bad, either, heated up with some butter on them.

If you can get your hands on a copy of Carpenter's 15 Minute Low-Carb Meals, do so! There are a ton of sides as well as entire meals that can be done on the quick.

I love sliced fresh zucchini sauteed in olive oil with red pepper flakes. Yum!
