I was wondering if anyone knows which flour is the lowest in Carbs for baking?

According to our carb counter here (at the right side of the screen), those flours have the following carb counts for 100g:

Wheat flour, whole grain__72.57
Almond flour____________19.74
Soy flour_______________30.38

Almond flour is also known as almond meal, or ground almonds. ;)

Wow.. thank you so much i have been pondering this for a while and searched the web but couldnt find the answers..

Am starting to bake now and was wondering if i can pretty much substitute enriched flour in normal recipies for soy flour or almond flour instead and replacve the sugar with splenda...
do u happnen to know whether soy flour or almond flour turns out better for baking cookies/ cakes/ bread?

I've never used soy flour, but I believe it has a bit of a "funky" taste to it.

Almond meal, or flour, cannot be substituted directly for other flours, as it has more moisture. You'd be better off finding some recipes that have almond meal as an ingredient, and are therefore going to work.

You can cut down the carbs in both soya and almond flour by mixing them 50/50 with soya protein isolate which has almost 0 carbs.

The probem with all these 'flours' is that they do not stick together well. You need to add eggs to nearly all recipes or the end product will simply crumble or fall apart.

THat must be why they have gluten flour in some of the recipes.

I am looking for a real, lo carb pizza dough recipe using yeast and no eggs. Anyone have such a recipe?

I've been using a blend of almond meal, coconut flour, peanut flour and flax meal. I found that the soy flour gave me a stomach ache (and gas - not a good side effect) The coconut flour is great but is really, really dry so you have to adjust your other ingredients and be ready to experiment a bit. Peanut flour has a pretty strong taste, but it great for cookies and scones.
