Nitrates?
 
I saw someone mention that we're not allowed to have meat with nitrates. I looked and saw that my turkey bacon has it. Why are we not allowed to have it? I'm not familiar with nitrate so I don't even know what it is.
I looked in my book and couldn't find any mention of it.
Thanks for any help.

I believe Atkins suggestion was to not eat it, but I don't believe he forbids it. It's used in bacon to cure it, and it's known to not be a healthy substance. It's most likely carcinogenic. And it's not necessary.

Go to your health food store and look for nitrate free bacon. It tastes great! It's smoked for curing, like we used to do when bacon was made at home. As an added bonus it's usually hormone free pork as well.

I find that it's about a dollar more than the top of the line bacons in the regular grocery store.
