ISO Recipe: SS Crepe Noodles
 
I just saw Suzanne Sommers on a local TV program. She had made Alfredo & noodles and the noodles were made from some kind of crepe recipe.

Does anyone have that recipe, it really looked good.

The crepes are made by mixing a couple of eggs in a bowl... then take a frying pan & spray with Pam, then pour a thin coating of eggs in the pan ..... cook on each side.... slice the crepe into noodle-looking slices then use as "noodles" in any type of recipe calling for them. I like to make chicken noodle soup, beef stroganoff, chicken stroganoff... the possibilities are endless.

I haven't ever tried Suzanne's Alfredo & noodles... it sounds yummy though!

I found the recipe!!!! Haven't tried it yet but it does sound yummy!

6 eggs
Salt & freshly ground black pepper
Butter

In a mixing bowl lightly beat the eggs

Season with salt & pepper

Heat a crepe or omelette pan over medium to medium high heat and lightly coat the bottom and sides with butter.

Using a ladle, put enoughegg in the pan to make a thin coating. When it sets, lift up with a spatula, being careful not to tear the crepe and turn.

Cook one more minute and then slide the crepe out of the pan and onto a dish.

Continue making egg crepes until you have use all the batter.

Stack the crepes as you would pancakes.

On TV she had the cook roll the crepes as you would for jelly rolls and then sliced into 1/4" strips.

Mac & Cheese

Unsalted butter for greasing baking dish
4 cups heavy cream
2 1/2 cups shredded cheddar cheese
pinch of nutmeg
pinch of ground cayenne pepper
8 egg crepes sliced into 1/4" strips
Salt & freshly ground black pepper

Preheat oven to 350 degrees F.
Butter an 8X8 inch glass baking dish, set aside
Place cream in a heavy medium saucepan, bring to a boil.
Reduce heat slightly and let boil gently for 10 minutes or reduced by half.
Lower heat and add 1 1/2 cups of cheddar cheese, nutmeg & cayenne.
Stir until cheese melts and sauce is smooth
Place sliced crepes in prepared baking dish
Pour sauce over crepes and stir to coat
Top with remaining cheese.
Bake for 20 minutes or until cheese is bubbly and beginning to brown
Season with salt & pepper & serve hot.

I tried the crepes with egg substitute and they were great that way, too! (high cholesterol...)
