Diet jelly
 
Ever since I started low carbing I have tended to get a bit of overload of savoury foods and really love to find a nice, low-carb sweet taste.

I find that diet jelly is great, and I usually have a serve of jelly and cream as my evening snack.

Anyway, I have a great and dead easy recipe to make a nice "different" dessert. I apologise if I have used someone else's idea here, but it was something I just thought about doing, having done the same thing using yoghurt in the past.

Mix 1 packet diet jelly with 250 mls boiling water
Dissolve jelly crystals well
Mix in 200mls of cream
(optional - some blueberries or sliced strawberries would go in nicely too, once the mixture has cooled slightly)
Pour into serving bowls or cups
Refrigerate.

It is a nice, creamy pudding, which makes a nice change from savoury, savoury savoury (would you like cheese with that?). It is about 30 grams of fat per serve, so I wouldn't dream of doing it on anything but a low-carb diet!

Hi there

I too have a take on your sugar free jelly concoction. You could try adding some cream cheese when the jelly has cooled and whisk it through. It is magic once set and you don't need the cream to gussy it up. I don't know the carb count on it but as a treat I'm sure it would be OK.

I wish you well in your journey. You should start a journal. It's a great way to keep track of your successes and pitfalls.

LOL - great minds DO think alike!!

I do the same thing with natural yoghurt, I love the tart taste the yoghurt brings into it. I am literally drooling typing this!!

irene, do you add the cream cheese to the diet jelly/cream mix or just add it to the diet jelly?
