Any ideas about how to cook ground beef for dinner?
 
I know I can make hamburgers but I want something different tonight. Any suggestions of your favorite ways to prepare ground beef into a great LC meal?

You can make a taco salad... always great for a quick dinner...

all the taco fixin's on a bed of lettuce...

I just made a low carb chilie based on a recipe from Quest (see my journal for recipe, from member named Quest). I used ground beef and black soy beans (which taste just like pinto beans in chilie). It was so good with a bit of sour creme and cheese on top!

Add some chopped onions and green peppers into the ground beef and shape into meatloaves -- you can make one big loaf or individual ones, which will cook faster. Top with tomato sauce and bake at 350 for 45 minutes to an hour.

Or brown the ground beef and add some chili powder, garlic salt, Tabasco sauce and whatever other spices you have on hand to make taco meat. Then serve with diced tomatoes and sour cream. If you want a "shell" or chips, fry a piece of provolone cheese on both sides until crispy, then break into chunks. Viola -- a taco salad!
