Pancake woes
 
I just bought my first container of Atkins Bake Mix and used the pancake recipe on the canister. It calls for 1/2 cup of bake mix, etc. The batter was way too runny. I couldn't even make one decent pancake. I thought at the time that the liquid ingredients outweighed the dry, but thought there must be something special about the mix. Has anyone else had that problem and solved it. I spent $14 on that mix at a local store and really want to use it. Thanks for any help.

I have been making my own pancakes at home, they are so yummy I dont have the exact carb counts but it is low....I just mix 1 or 2 eggs with some soy flour and a little "SoyQuick" flour, and a little splenda....It is soo good! I dont have the money to buy the Atkins brand so I had to get creative.

Hello!

We made the atkins pancakes once but just didnt really care for them. We use the bake mix for coating things to bake or fry, substituting that for flour in some recipes, stuff like that.

I have found a good crepe recipe but it is so good I think it could be used as pancakes too I'm sure it would taste delcious with syrup over it!

Eww! Atkins bake mix! Blech!

I have a container of it in the cupboard, which has been there about 6 months. I tried LC waffles with it and could barely stomach them. So I use the *heavenly* flax waffle recipe I posted in the breakfast section on someone's waffle thread.

But now I have a mostly full container I want to use too. *sigh*

I'm open to suggestions too. :)
