I was told that Spelt flour is a good option for lowcarb baking, is that true? I am trying to do some baking, muffins, breads and the Atkins baking items are so expensive. How do you calculate the net carbs if it just lists the total carbs. Spelt flour lists 24 grams of carbs but I was told it is a good option? :angel: :angel:

Spelt is a type of wheat. It's just as starchy and just as high carb as any other grain in the wheat family (wheat, rye, triticale, spelt and kamut). It has 24g carbs and 5g fiber in ¼ cup (4 Tbsp).

The lowest carb flours suitable for baking are soy flour and almond flour (which is just very finely ground blanched almonds). They won't work in recipes calling for regular wheat flour though, because they don't have the high starch or gluten content. You'll need to use special recipes made specifically with those ingredients.

There are many wonderful recipes here in this forum using those ingredients. I'm sure you'll get lots of ideas :idea:
