My substitute for Fruit
 
I am still on induction and was craving for fruit (an apple, pear - something juicy and crunchy) just now and guess what I had as a substitute! A CUCUMBER! It was almost as good and satisfying.

It's funny what we start diving into and pretending it's something else. Have you ever tried jicama? It's got that sweet crunch and very low carb due to high fiber.

For a slightly sweeter treat, try tossing cucumber with some lime juice and a smidgeon of Splenda. Sweet cucumber salad! Dill and sour cream are also good additions to make a cucumber a bit sweet. Mmm, now I want cold cucumber soup! :)

Gosh! I thought jicama was a native food available only in your country and did a search to see what it looked like. It is what we call "seng kuang" in my country and in abundance. All this while I thought it was a no-no food list thinking it is high in starch - the chinese also uses the powder in their cooking as a thickener - just like corn starch, arrowood.

Thanks for the other ideas - I will have it as a snack. Another thing I am going to do tomorrow is cucumber juice - grind one or two cucumber with water - sieve, if not too lazy - pour in a tall glass, add in a squeeze of lime and lots of ice cubes.

Oh by the way, I can't get Splenda or Stevia in my country so I make do with no sugar.

Thanks for th info. I eat my Jicama raw. I have tried frying them but it did not come out like french fries. So, I just stick with the raw stuff.

I slice up jimica and add it to salads for a little crunchiness.

You might also try zucchini if you like cucumber. I've grated it, pressed moisture out, then fried it for hashbrowns in the morning. Another great treat we found is to cut it into sticks, then toss with olive oil and pepper and grill. It stays really juicy and tastes great. Also has almost no calories or carbs for a whole zucchini.

I have been making fried zucchini and eggplant with keto crumbs and fried in olive oil--- yummy!
