nonfluffy pancakes
 
well folks
i bought some soya protien at the weekend and have been trying to make a decent pancake, but my attempts have turned out more kind of solid but tasty. has anyone any hints on how to get a more coventional texture pleeeeas

How do you want them? If you wan them thick but fluffy, include a teaspoon of baking soda and a splash of vinegar in the mix. Flat, leave it out. It is difficult to make good LC pancakes as soya flour doesn't stick together like normal flour and you need more egg or they fall apart. You might try adding some wheat gluten (but this would up the carb count a little). I haven't tried it as I'm happy with the little fluffy ones which I can now make well each time - but it's worth a try.

90% soya protein powder from Holland and Barretts is also good for making pancakes - and it's 0 carbs.

i have included the vineger and the baking powder and they were much nicer, Its the 90% soya protein powder i'm using and it seems to be doing ok.
I've been using malt vinegar does it matter??
The pancakes actully remind me of french toast now so i'm as pleased as punch.

it doesn't matter what vinegar. You could even use lemon juice. It's to make the baking soda fizz so they are lighter. I tried a batch with a good spoon of cocoa powder and some artificial sweetener - result chocolate pancakes - lovely!

No way!!! I've just checked my fitday journal.

I first made chocolate pancakes on the 4th May (my first day on Stillmans!)

I've just read a posting which said they couldn't make my pancakes normally but tried in the oven and came up with a pizza base - now that's an idea ;)

I guess i'l let you off with that one then, even though i was on the diet last year and made pancakes then too (chocy ones) but they were not as fluffy as the recipie you supplied. so my first successful ones are this years haha.
How long did the pancake take in the oven before it resembled a pizza base????

Hi,
I'm Pam from Southern California,

I read your thread on pancakes. I found one on the Sommeriszing page and here it is.

Cream cheese pancakes

1 8 oz package cream cheese
4 eggs, separated
1/2 tsp Somersweet (I used splenda and I used 1 tsp, could have used more)
1/2 tsp cinnamon
butter for pan, griddle

Syrup
2 teaspoons Somersweet (splenda)
1/2 stick butter, unsalted
1/2 tsp cinnamon

In a medium bowl, mix together cream cheese, egg yolks, Somersweet (splenda) and cinnamon until well blended.

In another bowl, beat egg whites with an electric mixer until stiff peaks form. Fold egg whites into cream cheese mixture.

Heat griddle to medium heat. Dollop about 1/3 cup of the batter onto the buttered griddle.

Cook until golden brown, about 2-3 minutes. Flip and cook other side to a golden brown, adding butter to griddle as needed.

To make Syrup...
Mix sugar substitute with melted butter until dissolved. Stir in cinnamon and pour over pancakes.

This was really good. If you like the mock danish, you will LOVE this. I liked it but would only use 3 eggs next time since it was a little eggy tasting for me. They syrup is fantastic drizzled over these!!
Serve with bacon or sausage.
