Potasium
 
Can anyone give me good sources of potasium which are also low carb? I need to up my potasium intake.

I've had to watch my potassium intake in the past, and found a few foods that would really help on a day-to-day basis.

The best dietary source isn't as LC as we'd like, but a small can of V-8 juice is 6g carbs, and over 900mg potassium.

Asparagus, 1 cup = 365g potassium, 4g ECC
Broccoli, 1 cup chopped = 286g potassium, 2g ECC
Kale, 1 cup = 294g potassium, 5g ECC
Spinach, 1 cup fresh leaves = 834g potassium, 2.5g ECC
Tomatoes, 1 cup chopped = 399g potassium, 6.3g ECC
Artichoke, 1 large = 535g potassium, 8.8g ECC
Mushrooms, 1 cup chopped, 552g potassium, 4.5g ECC
Sirloin steak, 6oz. = 611g potassium, 0 ECC
Chicken breast, 6oz. = 404g potassium, 0 ECC
Tuna, 1 small can = 395g potassium, 0 ECC

There's more, but these are some of the foods I eat regularly to keep my potassium up. Hope this helps!

Catfish
Steak
Au Jus (Unthickened Meat Juice)

Potassium per 16 ounces:

Pork -- 1900 mg
Slamon -- 1900 mg
Red Meats -- 1700 mg
Catfish -- 1600 mg
Chicken/Turkey -- 450 mg

In addition to the foods Scott listed, these foods are also high in potassium:
  • 1 can (7 oz/ 200g) sockeye salmon - 1,391mg
  • 1 medium california avocado - 1,097mg
  • 1/3 cup natural sunflower seed kernels - 331mg
  • 1 Tbsp unsw. cocoa powder - 254mg
  • 2 Tbsp natural peanut butter - 214mg
  • 1/8 tsp potassium-salt substitute - 325 to 500mg

    (all values from our carb counter tool)

Fish and most nuts are relatively good sources of both potassium and magnesium .. :cool:

Thanks Scott and the rest of you. What great information. I knew this forum would come through for me.

I will readjust my menu accordingly. I'll look for the V8 juice also. (I love that stuff!)
