sugar/carb-free turkey or chicken lunch meat?
 
so, i'd like to find a sugar and carb free turkey or chicken lunch meat type thing. it's so easy to have a package of that lying around that i can snack on. so far, all i can find to meet this requirement is salami or pepperoni, and i'd like to get into something with less fat/salt/etc.

but everything i've seen at the stores has sugar in it and carbs. i want a meat with no carbs!

any help is appreciated. :)

Wish I could be of more use... at the local grocery store here, I could only find ONE selection out of the whole deli counter that had no added sugar (turkey) and it was eight bucks a pound! Yowza!

I'd be pressed to find a deli-style meat without any added SOMETHING. The ony way around it is to cook your own ahead of time. I keep a bag of cooked turkey in the fridge, and freeze the rest in smal ziplocks to use as needed. BTW, watch the labels on even "regular" turkeys, since some are injected with a basting solution containing sugar!

The only place I've found sugar free lunch meat is at the Vitamin Cottage in Ft. Collins. Wild oats dumps tons of "organic" suga rin thiers (though they are nitrate free). I have found uncured chicken and turkey franks at a health food store in my hometown, but they are still 1g carb apiece.

The sugar free meats cost quite a bit. The main problem is without sugar and other preservatives they can go bad fairly fast.

This time of year frozen turkey breasts are pretty inexpensive and I swear by this recipe. Totally frozen put a turkey breast in a crockpot for about 7-8 hours and add any seasonings you want. Because of the ice in the frozen breast it is the most juiciest. No water or broth needed. It works for pot roast,too. Handy to just cut off just what you need and you know what's in it.

GREAT idea, bk! why didn't i think of that before?!?! that was what was holding me back on buying turkey and cooking it myself was it being a pain to do. i never use my crock pot enough.

couple of questions:
do you buy a bone-in breast or boneless?
how big a crockpot do you use?
do you put it on low or high?

Bone-in because it gives it more flavor---I'm not sure about the size of my crockpot, you know it's about "that big". (Sorry about being such a smarty!) It should be one of the larger ones. And I usually do it on high. I've even done it with game hens-you know the little one that look like mutant chickens. The skin doen't brown crispy like in the oven but the flavor and juciness makes up for it. Plus its done when you get home and just falls off the bone. Good luck!!!

I've stewed chicken in the crockpot before, usually the leg quarters when they're on sale. I take most of the meat out for salads, wraps, etc, and the stock gets a few veggies added, and homemade soup! Kind of a "twofer".

I have found sugar and nitrate free lunch meat at Whole Foods. It tastes great but costs much more than the regular. I also have been cooking up my own turkey lately. I have been roasting it, but the crock pot idea sounds great.

:agree: Holy Smokes, who would'a thunk to use the crock pot for a frozen turkey. Can't use it on the one I got for Christmas though. It'll barely fit in my oven!!!

The smallest turkey I could find over thanksgiving was 12 pounds. No way that could fit in my little slow cooker. They had just turkey breasts, but those were so full of solution they completely looked unappatizing. I am pondering getting another turkey to roast next month though. The thanksgiving left overs are almost gone and I love left over turkey :)
