I hate Vegeatbles

I don't like veggies, well actually the ones I like are not low carb (like carrots and potatoes) or I am allergic to them (like peppers and tomatoes). It seems the only veggies I can eat are the horrible green ones. I force them down my throat daily, but I just don't like them. Is there any way to disguise their horiible taste? I need some ideas for some quick veggie dishes. Help please!

Right under this thread in the Veggies & Side dishes forum is another thread on vegetable ideas with a link to the Atkins website vegetable recipes. There's lots of good ideas!

Vegie's

just a few I eat
mushrooms fried in butter
green onions and mayo for chicken and egg salad
cucumber sticks, icy cold with dip
turnip, cubed and cooked then drizzled with butter
cauliflower steamed with lemon butter
Did I mention I love butter, hope this helps.

I am a recovering veggie-hater, myself. :) The two tricks for me were being willing to try things I've never tried before, and treating myself to really tasty sauces and dressings.

-Ever had zucchini? It's really good! Cook it in sauce and it's the next best thing to pasta! Steam it and add alfredo sauce and parmesan. YUM! It doesn't have a strong taste, so I like to dip it, too.
-Green beans are my new favorite veggie: a little butter and salt, and it's the next best thing to corn. :)
-Do you like spinach? I'm not a huge spinach fan, but it's delicious as a quiche or mixed with cream cheese.
-For the veggies I don't particularly like, ie broccoli, brussels sprouts and cauliflower, I drench them in cheese sauce. :)

HTH. Be creative and don't be afraid to try new stuff. :)

I think the key really is to drench them in a creamy/buttery sauce. I was talking to my bf about how we are lucky as low carbers that we can disguise our veggies with sauces. I mean if we were doin low fat we'd just have to eat them plain. Ugh!

Thanks for the tips! I printed some of the recipes. They sound great.

Back out of Veggies and Side Dishes, go into Main Dishes, go the 3rd page and scoll about 3/4 of the way down to Chinese Dinner Ideas and look for the Chinese Fried Rice recipe. It's your basic fried rice recipe, except for the fact that finely chopped cauliflower is used in place of the rice. If you love fried rice, you will love this -- tastes NOTHING like cauliflower! Very, very tasty!
