Almond muffins
 
So many people have asked me for this, when I've posted about it, I've put it here.
It isn't originally my recipe, I can't remember where or who I got it from, so if it's yours please post and we'll attribute it properly!

They can be savoury as well as sweet, take 5 mins to make and 10 to bake!


Ingredients (for all types)
200g ground almonds
50g butter
4 eggs
1 teaspoon baking powder


and then, if you're making sweet ones,

4 - 6 little packets of Splenda (2-3 flat teaspoons)
flavouring - I currently use 3 teaspoons of cocoa powder, have used the same of ground ginger or a teaspoon of cinnamon.

or if you're making savoury ones,

no Splenda, but flavouring - grated cheese, mixed herbs.
These savoury ones are great with pate.

To make
Mix everything together (add a bit of cream if the mixture is too stiff to drop off the spoon when you knock the spoon on the side of the bowl - not usually needed)

Grease 'bun tins' - i do this with olive oil for speed, can use lard too.
(don't know what you call them over there, but you know the things, 12 little 'holes' in a tray)

Spoon a very heaped teaspoon into each hole. Makes between 16 - 20.

Bake at 180C (about gas mark 6, don't know in F) for 10 - 15 mins until risen a bit and a knife comes out dry if pushed in.


Per muffin - based on 20 per recipe

Cal 75
Fat 6.5
Carb 1.5
Protein 2.7

These are absolutely delicious JayKay! :thup:

I managed to get 16 out of the mixture....and they froze well, so lasted a while....

I was wondering....could this same recipe be used sans the sweet extras but with a few seeds to make an almond loaf ? The recipe is pretty low carb so could make sandwiches from it??

I'll try this weekend, and let you know if it tastes good...

Almond Muffins Conversion?
 
Could you share the Almond Muffin recipe if you converted it to U.S. measurements? Tried looking at the conversion page, just couldn't figure it out. I really appreciate it... love this support website!

I used 2 cups ground almonds, just a little under half and stick of butter, baked at 400.

I made these yesterday...I only used 3 packets of splenda. Next time I will increase this b/c they are not sweet enough I dont think.

I would like to try this recipe.....Can I use almond butter instead?....If so, how much?....And if not, how long should I ground my almonds for?...Should it be dry or wet like almond butter?...
