Vegetarian LC recipes
is there any place on this site that I am just overlooking decicated to vegetarian LC recipes? They seem to be hard to come by.

Not really this site. There is a forum for recipes and in there is an area for salads and veggies. I pretty much have to hunt around in the different lc recipe sites for veggie stuff.

Bummer. :( I tried to find some on SBD forum since they are veggie friendly but they were pretty high carb recipes.

There should be plenty of links to low carb veggie recipes on this part of the forum, though. Just look around. OR I can certainly post some links I have found here.

That would be good! I am always looking out for really easy to fix lc vegetarian stuff.

Well I really love to cook and I hate eating the same thing all the time so I am always trying new recipes. I'm not afraid to experiment so I come up with some pretty good stuff most of the time. I have had a couple weeks of being bad and I'm just now trying to pull myself back in when it comes to carbs. I was really unsure of whether to stay on atkins being pregnant. It's a little scary since there is so little info out there on it. I was really lucky though. My midwife said I was perfectly okay to stay on atkins just final phase. She asked me to have seafood a few times a week (which I will do cause if that lets me stay on atkins while pregnant it's worth it) and she asked me to increase my intake of nuts and to try to fit in a whole grain at least once a day. I feel pretty confident that I can mesh that in with Atkins and the recommended carb intake for pregnancy. Anyways, I'm sure I'll be posting recipes in no time! :)

This is what I usually make in place of Thanksgiving turkey. It's really high on the calories and fat so it's not something I would have all the time but a nice treat none the less. I put the stats into fitday using a cereal I just bought. ( I just now read the label and see there is sugar!!!!! Geeze you think when you see a low carb food they would know to make it sugarfree!! Guess I need to check my labels better. Use a 'cornflake' type cereal the more crunch and thicker the flakes the better really. Just for info to compare your own cereal to the one I used as the recipe base(Total protein) has for info 120 calories, 3.5 total fat, 0 cholesterol, 11g carbs, 3g dietary fiber, 2 sugars, 13g protein.
Special K roast (can you tell what I always used for it before LC!?) 32 oz cottage cheese 4 eggs beaten 5 to 6 cups flaked cereal ( I used 6 in my fitday calculation) 2 cups onion, chopped 1/2 cup chopped pecans 1/2 cup olive oil or melted butter ( I like the taste of olive oil but it's preference really) salt pepper 1 tsp thyme (I usually double both the sage and thyme amounts) 1/2 tsp sage Mix all ingredients together and pour into a 9 X 13 baking dish. Bake at 325 for 45 minutes covered and then bake uncovered for another 30 minutes. 8 lg servings 481 calories 16.49 net carbs (obviously not something for induction) 32g fat 21.62 carbs 5.13 fiber 30.99 protein You can definately use smaller serving portions to cut down the carbs some. |

Elsah, you might also try the Recipes and Vegetarian forums at the Protein Power website www.eatprotein.com. Any recipe I've posted there usually has 'vegetarian' in the text somewhere so that people can find them in searches, and the Vegetarian forum is full of links to recipes in the Recipes forum. Every recipe I've posted there isn't vegetarian, but many are or include the vegetarian modifications.
