Does anyone know a good meatloaf recipie without the bread or bread crumbs? I would like to try a recipie called a Cheese-Stuffed Meat Loaf but know that the 1/4 cup of plain bread crumbs would add carbs. I am new here and can't wait to see results! :wave:

From what I understand, you can use the same recipe that you wanted to use for the Cheese-Stuffed Meatloaf and simply replace the bread crumbs with something else. Ground up pork rinds, for example. I don't know, perhaps you could also use textured vegetable protein. Someone who knows more about this? Any ideas for a bread crumb substitute??

Add ground pork rind to your meatloaf...

...if you haven't already tired them, they are a staple in most LC households. Also, you could try adding parmesean cheese.

Love that meatloaf! Makes great LC leftovers and is even good fried with eggs at breakfast.

I made Karen Barnaby's Slightly Italian Meatloaf this weekend and it was Superb. In Fact my wife even admitted that it was better than her recipe and that my friends is a very rare confession. :lol:

I also love Karen's Slightly Italian Meatloaf...

...It's great hot or cold...and I also enjoy a slice fried with eggs for breakfast as per Karen's suggestion.

The sundried tomatoes are sooo good!
