Does anyone have a low carb version recipe of cornbread? I had some low carb cornbread mix from the vitamnin store but finished it and itw as good. I was just wondering if you do any of you would share it. I appreciate it.

I made this for thanksgiving bread crumbs, it was so yummy, but pretty crumbly.

I too am a Southerner and cook cornbread often. I use a combo of carbquik (2/3 cup), hazelnut flour (1/2 cup) and a little coarse cornmeal (1/4 cup--for texture), one egg, one teaspoon baking powder, 1/2 tsp baking soda and 6 drops liquid splenda--sweetzfree brand (1/4 cup sugar equivalent). You may prefer less sweetner but I'd use atleast a tablespoon sugar equivalent (I had always put extra sugar in my cornbread). I haven't tried subbing soy grits for the cornmeal but I just got some so I may try that to reduce the carbs. I use Hood Carb Countdown milk soured with vinegar (actually I use 1/4 cup buttermilk then the rest soured Hood milk). We like it as well as regular cornbread.

Here's another recipe--I haven't tried it because we're happy with the one I now use. But I often make Sherrie's pancake recipe and it's awesome (just like regular pancakes) so I assume the cornbread is good too. I plan to try one day for comparison. I don't have Atkins mix but I use the Carbsense zero carb baking mix in the pancakes. http://horseartandgifts.com/snacks33.htm

I have made Sherrie's cornbread and it is delicious. With snow weather in the forecast I will probably make cornbread this weekend. I think I'll try your recipe with the soy grits. It really does give it a cornmeal texture. BTW I also use soy grits to fry fish!!!!!!!! Delish...

How about using corn bran? I bet that would give some corn taste without adding any net carbs.

I just hopped over to the Bread and Baked Goods section of this very forum, and the first thread at the top of that section is Contents of Bread and Baked Goods, a quick search for "corn" gets you some cornbread recipe right off the bat....

I thought about corn bran but can't find any around here and I didn't see it on Netrition's site (that's where I do most of my online ordering). We don't have any health food type stores around here.

Forgot to mention--I do melt bacon grease in cast iron skillet and include the grease in my cornbread batter--not healthy but I just can't help myself.
