A quick filling lunch
howdy folks...this is my first week of induction and i had to get creative for lunch....my mom bought sandwhich supplies, but gee thanks mom! i cant have the bread...so i improvised. i'm no chef and i'm used to just slapping together PB&J, so this made me quite proud of myself.... :p
i took a large cut of deli turkey, put a slice of cheddar on it, put a couple slices of bacon, and put a celery stalk with cream cheese spread in it. i rolled it all up into a little wrap....i had 2 and a half and was feeling rather full. what a quick satisfying lunch...nothing revolutionary, i know, but it is quite tasty....now on to the day's hobbies. |
Sounds yummy!

I find chicken salad in a cup is yummy. I usually buy whole chickens for about 3 bucks a piece, boil then stir fry (just to make sure its cooked). bag then freeze. All ya gotta do is defrost, add a little mayo and boom youve got lunch. I call it "Meat in a cup!"

gawdess--
I do the same thing, but i also use it for quick tacos, burritos or almost any other thing that uses ground beef. We have a Cash-N-Carry here I believe it is the same as Smart and Final.. I get skinless boneless thights for about .69 a pound.(40 pound box) but I boil and put in foodsaver bags then freeze. eaiser than the whole chickens.... use to replace tuna with it in casseroles also, kids like better than tuna. thanks for the tips |
I may have to try that Eli.. sounds really good.
I eat at my desk for breakfast and lunch and would really not have to sit here with my bland lunch one more day! |
This diet has really brought out the creativity in everyone...keep up the good work lo carb inventors. :cheer:
