spaghetti squash
Does anyone have any recipes or tips for this - I'd like to give it a try.

My DH has made parmesan chicken with marinara sauce to go with it. He has also made The Spaghetti Factory's recipe for myzithera (sp?) and brown butter to go with it.

Chicken Spaghetti Squash Alfredo
2 cups cooked spaghetti squash 3 tablespoons butter 3 tablespoons heavy cream 1 clove crushed garlic 1/4 cup grated or shredded Parmesan cheese Package oven roasted chicken, or some of your own. Stab the spaghetti squash several times with a fork (to keep it from exploding) and put it in the microwave on high for about 15 to 25 minutes. Depending on the size of the squash and how powerful your microwave is. Then slice through it and open, scoop out the seeds. Take a fork and start scraping at the meat (spaghetti) of the squash. Stir in butter, cream and garlic, and cheese. When butter is melted add warmed chicken! And that is it! 4 servings, with 4 grams of carbs a servings. |
I have seen recipes for Spaghetti Squash and would like to try it also..what exactly am I looking for when I go to Walmart??? LOL
I know this is a vegetable but I have only seen butternut squash and zucchini...what kind of squash do I look for? LOL Silly question but if I don't ask I will never know and I really don't have the nerve to have my name announced aloud in the local Walmart "Rosalynn in the produce isle wants to know what a spaghetti squash is can you believe it?" LOL Thanks in advance to anyone who knows what this is :) |
It looks like a big yellowish/orangish ball. :lol: Actually, it's slightly larger than a cantelope and the skin is smooth, like watermellon skin.
When DH cooks our squash, he usually cuts it in half, places in a microwave dish, and covers with plastic wrap. Then he cooks it in the micro but I don't know the time on it. |
Thanks a bunch! :) I am sure you just saved me from a most embarassing situation at Walmart tonight when I go grocery shopping. NOW..off to find recipes! <giggles> :)

I cook mine in the oven,
cut in half (long ways), remove seeds and innards lay flat side down in dish cook at 425 for 40-45 mins use fork to remve spaghetti i make this all the time, but it is a little carby, so watch out!!! |
I cover mine with alfredo sauce or just butter. :yum:

This is one of my favorite all time foods. Back from the WW days..but I didn't get to use butter then. I like garlic and butter......and some onion flakes. Yummmmmy, and so filling, tasty, and satisfying.

I tried spaghetti squash
and had a great sauce for it, but I didn't like it at all. I'm not a picky eater either, and usually enjoy trying new foods, but this one didn't fly. I cooked it according to the directions (in the oven in some water--don't remember the measurements), and it came out like spaghetti, but it tasted so stringy and crunchy--yuk. I'm afraid to try it again. :(

I had mine come out crunchy once - it was undercooked. Now I sort of know what to look for.
Love this stuff. I made up a big old pan of spaghetti squash carbonara last night and am living off it all week! Yum! I believe this one should be available on Karen's recipe pages. |
Scared, Sounds Nasty
Spaghetti Squash sounds scarey. I've heard a lot of people talking about it. Does it taste like a vegetable?? I'm not a big vegetable fan - thank goodness for lettuce. I wouldn't mind it maybe if it was soft but crunchy - yikes. Does it taste like Butternut Squash?
