I am have a very difficult time finding a pasta I can eat. I have wheat allergies and I've noticed that all the low carb pastas I've been able to find have either wheat gluten, wheat grits, or wheat in there some how.

Anyone have an idea where I could find something like that, or a recipe where I could make my own? I'm not so good at making pasta, but willing to try it again. Fubbed the first time. LOL.

I have tried the shredded tofu, which would have been good, but it pushed up my blood sugar badly. I'm hypoglacemic *chronic low blood sugar*. Not to mention the fact that rice, corn, etc. send me into a tail spin. That's one of the reasons I started this diet, not to mention the fact that my body was totally revolting on me every time I even ate something carbish like bread, pasta, cereals, cakes, cookies, etc.

Any ideas would be great. As right now, my diet is VERY limited.

Yes, give up your pasta. Finding a substitute for a high carb food doesn't teach us anything about our new way of eating.

As far as getting bored with food, check out the recipe section. I haven't even been able to read all the recipes yet. I tend to keep food simple and rotate meals myself.

My fav. low carb meals.

Hamburger salad: I make a big salad and my husband cooks the burger and plops it on top! Add mayo, must, dressing to taste.

Taco salad: Make a salad, put in leftover taco meat, dab of salsa and sour cream, shredded cheese, voila! Some people add pork rinds for crunch, but I decided I didn't like them.

Tuna and hard boiled eggs with mayo: sounds strange but I really like it mixed together.

Broccoli with chicken and cheese.

Spinich with vinegar and butter, top with leftover meat

Bacon and eggs

Eggs fried in butter!!!! (I still haven't gotten over this one, I love it)

Make sure you eat enough protein, 60 grams is only the bare minimum! That should stabalize blood sugar levels for you.

Eat your greens 20 grams at least.

Drink only water 64 oz. is the minimum.

Avoid artificial sweetners, fake foods, hidden flours and sugars, and trans fatty acids like the plague!

Gabrielle , my husband isn't a low carber so when he feels the need to have pasta what I do is fix his high carb stuff and for myself I substitute sliced, lightly steamed zucchini or yellow squash in place of the pasta. The squash family of veggies go really well with tomato type sauces.

Hope that gives you some other ideas ;)

Elihnig, Those meal ideas sound great. Thanks. As for the pasta, I have no problem doing without it, did before, but I was also hoping to find it to try with my son. I have been looking at recipes and have found some decient ones. :)

Spaghetti squash makes a pretty good substitute for spaghetti and it is on the allowed foods.

I attempted to cook speghitti squash about 15 years ago, but with no success. Not sure what I did wrong, but I've not tried again since. Do you have any suggestions for cooking it?

Spaghetti Squash
 
I can't remember if you cook the spaghetti squash whole in boiling water to cover or if you bake it whole. After it is cooked, you cut it in half and take a fork and sorta scrape it out so that it really looks like strands of spaghetti. I guess a web search is in order to find out exactly how you cook it. The only thing I know for sure is that you cook it whole. My mother-in-law used to grow it and cook it but I just can't remember exactly how she did it. It was really good though! It made a great spaghetti substitute and I am glad that I saw your post so that I can add it to my plan.
