Rich Chicken Salad
I was in the mood for something salty, crunchy, creamy and rich when I made this.
Rich Chicken Salad 2 1/4 cups of cooked chicken, chopped or cubed 1/3 c. mayo 1/2 c. sour cream 1/2 c. chopped celery 1/3 c. chopped walnuts 1 TBS capers salt and pepper to taste Mix the ingredients. Maybe it's just me, but the walnuts (raw organic) in here tasted a bit like macaroni in chicken salad. It's very moist and the celery and walnuts give it a nice crunch, too. This can be served on lettuce or with celery sticks. The carb count is for the chicken salad by itself. Makes 4 servings 3.5 carbs per serving 413 calories per serving |
