Good substitute for Rice/Pasta
 
I have found a good substitute for Rice and Pasta.

Grade a head of cauliflower and pop in a steamer for about 6 - 8 minutes then serve with accompaniments. It works a treat and is a good belly filler...

Try it it helps also helps bowel movements well.

First Timer, I tried that last night. But after grating the cauliflower I could not figure how it would not fall through the steamer so I "fried" it. Then while it was cooking I added some chicken broth, crumbled bacon, parsley and asst. seasonings (sugar free). It was wonderful. And stretches a head of cauliflower a long way. I am wondering how you measure the carbs though. A cup shredded is a lot. Any ideas? Sweebie

I am cluless about the US "cup" system..... So I just weigh it and use about two cuppsed handsful. I shall weigh tonight and let you know.

My steamer has holes about 1/8th of 2/8ths of an inch so they do not fall in through it... try it...

I have enjoyed cauliflower as a substitute for mashed potatoes as well as for rice. Because I'm a somewhat lazy cook, I simply boil a pot full of the florets and then mash them when they're done. Works just fine for me and eliminates the grating step.

I'm still unclear as to the count on Cauliflower. How does one measure a cup? Stuffing florets into a cup is sure different than a cup of grated. How do you count it? Sweebie :confused:

The easiest way to compute values for cauliflower is to weigh it raw. According to fitday.com

8 oz of raw cauliflower =
22 calories
4g carbs
2g protein
